    Time to smoke some Salmon

    The by product of fishing is a freezer stuffed with fish
    First the brine
    1 qt of water
    1/2 cup of dark brown sugar
    1/2 cup of salt
    1 tsp. of garlic powder
    1 tsp. of onion powder
    1/4 tsp. of tabasco sauce
    1/2 cup of white wine (Chardonnay)
    1 cup of soy sauce
    3 tsp. of real hickory smoke

    Makes about 1/2 gallon of marinade

    Place fillets (I prefer skinless )in a container and cover with liquid and refrigerate
    2 layers of fish is ok , turn top layer over after day 1
    Marinate for 3 days
    Remove fillets from brine and lightly rinse with cold water and pat dry , discard brine
    Let filets stand out until a glaze forms usually in about a hour and place directly on clean smoker rack
    Or you may wrap in cheese cloth if you want
    Bring smoker to 90-100 degrees for the first hour increasing heat 10 to 20 degrees every hour until
    Smoker reaches 160-180 degrees Smoking without mercy for the first two to 3 hours (my favorite is apple wood)
    If white droplets appear on the fillets pat off with a paper towel
    The job is done when the internal temperature of 140 to 160 degrees is reached
    I lay a cookie sheet on top of the fillets and invert the rack to shake the fillets loose from the wire
    The next part needs no further instruction

    My father gave the family smoked salmon for Christmas one year from some famous smoking store
    The stuff was really bitter and not edible for me , (I can eat almost anything)
    That turned me against smoked salmon for years
    My friend offered me a piece of this recipie and it made my day
    Been tearing it up ever since
