    Re: Tender Chicken Breasts

When I was a kid (young teen), my parents had a gal from the church come and stay at our house to babysit me (collar me) while they went far away to visit relatives (a funeral thing I think).

One night she cooked pork chops. I don't think she ever tried it before. They literally splintered in my tongue. Completely inedible. I've never even had jerky that dry and woody!

    I'll never forget that.

Dry splintered Pork Chops??? Little butter, Salt, Pepper, Maple Syrup, and tomato sauce ( substitute with apple sauce ) with pasta- broccoli carrots or potatoes.

Don't know measurements or times. Comes out magnificent!!!!!!

I'm no cook or chef. Just don't want to starve.

    Re: Tender Chicken Breasts

I just finished baking up some of these. Had two for lunch and refrigerated the other two for dinner or another lunch. Very juicy and tasty - thanks for sharing Stinemus! Only observation was that I used coarse kosher salt and my rub came out a bit too salty for my taste and I will skip the 2 tsp of salt in a future rub!

It does lean a bit on the salty side of the scale. That is wifey's influence. I have literally seen her put extra salt on potato chips.

Hey! blkgunlvr! I got the scoop on the saltiness.

The spousal unit says that the saltiness is due to the amount of time in the brine. She says the rub won't affect the saltiness of the meat. She says to cut your soak time in half.

Dang! Ya learn something every day!

    Re: Tender Chicken Breasts

Thanks for the update, but FYI, I scraped the rub off my second serving and it was very palatable. I've been brining turkey for several years and now consider it the only way to cook the Thanksgiving staple!
