Anyone have a special recipe that they'd like to share before the Fourth of July Holiday grilling time ??? I'm afraid that I'm recipe challenged, so I don't have anything to offer !!!
For our church fall fest last year . . . we used an outdoor fire ring . . . put a piece of flat stock steel on it for a makeshift grill . . . and we made "smash burgers".
They're basically a 2.5 oz of hamburger . . . smashed down to about 1/8 inch thick . . . put on a hot grill for 2 minutes . . . that bottom side will have a bit of a crust at the end of the time . . . flip it over . . . toss on a slice of american cheese . . . take it off at the end of the next 2 minutes . . .
Put one of these on the bottom of a toasted bun . . . then stack a second one on top of it . . . and let the eater do his thing with ketchup, mustard, mayo, pickles, etc.
They are super easy to make . . . were a super hit . . .
Check the youtube channel . . . bunches of variations . . . but that is the original . . . and is great

On Independence Day, we usually have a big family "Fish Fry", main course is catfish, hush puppies, fried potatoes, cole slaw on the side and other trimmings. We also will have fried chicken as well. Fish Fry's are a big thing in Arkansas, probably the other southern states too. I'm the Patriarch of the whole family now, we host the big family things on my homestead, we have a lot more room than anyone else.
Chicken breast cubed in 1 in pieces
Chunks of pineapple, and cherries may be added or onions and peppers.
Bamboo skewers (soak in water for half hour prior to use)
Teriyaki sauce (can use store bought, but, I prefer to make my own)
7 Spice powder (I get mine from amazon)
Teriyaki Recipe
1 cup each of the following:
Soy sauce, mirin, sake, sugar
Put all in a pot on high heat. Be careful not to let boil over. Bring to boil repeatedly in order to thicken. Add a little cornstarch mixed with water to help with thickening if desired. Sauce should be the consistency of corn syrup. You can add minced. Garlic for added flavor.
Brush over skewered chicken (all sides) and place on grill. As it cooks, turn and brush more sauce on. Once fully cooked, remove from grill, sprinkle 7 spice powder to taste.

We had a "fireworks" party at the house last night . . . 16 adults . . . one rug rat . . . and she was cute as a button.
All were gone by 10 or so . . . and I fell into bed.
Up 3 times with leg cramps . . . foot cramps . . . wound up sleeping in my computer chair.
Could not work up an appetite for the usual eggs or cereal . . . wandered into the kitchen about 11 AM . . . hungry . . . found this.
Might just do this more often.

I have been plagued by leg and hand cramps for a while. Leg cramps every morning when I rolled out of bed. Hand cramps when driving long distance.
Told my chiropracter and he recommended a non-scrip supplement called "CAL-MAG CAPS" by a company called NOW. It is a calcium and magnesium supplement and I be darned but it works. I am very skeptical of scrip meds but like I said, this stuff works for me.
I highly recommend you give it a try.
